If I have a boon on a skill check, and one of the cards I flip is a Joker, can I still choose the other card? If yes, then does the Joker still trigger a shuffle and hand re-draw since Jokers must stay in the deck and not go to the discard pile?

Also, what constitutes a critical success on a skill check? Is it double the target number?
